P28 Pineapple/Coconut Rum French Toast

Ingredients:

  • 1 whole egg or 2 egg whites
  • 1/4 cup of Coconut Milk
  • 1 tablespoon of Stevia (optional)
  • 1 tablespoon of Coconut Flakes (unsweetened)
  • 1 tablespoon of Shredded Coconut (unsweetened)
  • 1/4 cup of Pineapple Chunks
  • 2 slices of P28 High Protein Bread

Prep:

  • Make sure to gather all ingredients and measure them out accordingly.
  • Cut your pineapple into the desired size of chunks - Maintain at 1/4 cup total size.

Directions:

  • Put desired amoutn of pineapple chunks between 2 slices of P28 bread and set aside.
  • Egg Wash - Put egg or egg whites in bowl with coconut milk, stevia and coconut flakes and mix well.
  • Dunk P28 bread (together not separately) into the egg wash on both sides and cook in a heated pan making sure to flip to both sides.
  • Remove from pan and toast the 1 tablespoon of shredded coconut until golden brown.
  • Optional: Mix together an additional 1/4 cup coconut milk, stevia and coconut flakes and pour over top of finished french toast.  Top with toasted shredded coconut and additional pineapple.
